Brown Butter Rice Krispy Treats
These are the best Rice Krispies Treats in the entire world, or at least the best I’ve ever had! Brown butter makes everything better, and these Rice Krispies Treats are no exception. They’re buttery, gooey, and loaded with extra marshmallow pockets, with that rich, nutty brown butter flavor that takes them completely over the top.

Ingredients
2 sticks salted butter
2½ (25 oz) bags mini marshmallows, divided
2 tsp vanilla extract
8 cups Rice Krispies cereal
Instructions
Line a 9×13-inch baking dish with parchment paper and lightly butter the parchment.
Add the butter to a light-colored skillet or saucepan over high heat. Once melted, whisk quickly and continuously. The butter will foam and then begin to turn golden brown, with brown specks forming on the bottom. Remove from the heat when the butter is about one shade lighter than your desired color, as it will continue to brown from the residual heat.
Immediately add 2 bags of mini marshmallows and stir until almost completely melted and smooth.
Stir in the vanilla extract, then gently fold in the Rice Krispies cereal until evenly coated.
Let the mixture cool for about 1 minute, then fold in the remaining ½ bag of mini marshmallows. This keeps them mostly whole and creates gooey marshmallow pockets throughout the treats.
Transfer the mixture to the prepared baking dish. Using buttered hands or a buttered spatula, gently press it into an even layer. Do not pack it down too firmly, or the treats will become dense.
Let cool at room temperature for about 1 hour, then cut into 12 large squares.
Tip
Immediately put your sticky pot in hot water to clean. Otherwise is will become like cement in the pot and be a nightmare to clean.
