15 Bean Soup with Smoked Turkey and Greens

This recipe is incredibly easy to make, but it’s also so comforting and filling. I saw someone making something similar online and immediately ordered the ingredients so I could make my own version. This is what I came up with, and I hope you enjoy it as much as I do!


Ingredients

1 bag 15 bean soup mix and seasoning packet

1 yellow onion, chopped

1 red bell pepper, chopped

6 cloves garlic, minced

6 cups low sodium chicken broth

2 TB Apple cider vinegar

1 tsp Tony's Creole Seasoning

1/2 tsp smoked paprika

1/2 tsp cayenne pepper

1 tsp onion powder

1 tsp dried thyme

1 tsp garlic powder

Tobasco, to taste (a few dashes)

2 smoked turkey legs

16oz bag prepared raw collard greens


Instructions

  1. Rinse your beans, then addd everything to a crock pot in order. Cook on low for 4 hours and high for the last 2 hours or cook on low for 8-9 hours.

  2. After cooking is complete and turkey legs are fall off the bone tender, remove the turkey from the crockpot and put it on a large plate. Cut off the "sneaky bones" and add the meat back to the pot.

  3. Serve with my skillet cornbread.
