Truffle Turkey Burger

Truffles used to be a delicacy that only members of the royal family could afford to enjoy, but now they have become a mainstream ingredient beloved by gourmets around the world. Why are truffles so delicious? The answer to this question is that truffles are rich in umami, which can enhance the flavor of any dish. Often times, turkey burgers are dry, tasteless, and rubbery. Due to the intensity of the truffle and the addition of mayonnaise to the meat mixture, this recipe comes out moist and flavorful. This dish is the perfect treat for burger night!

Ingredients

  • Olive oil (about 1–2 Tbsp, divided)

  • 1 medium yellow onion, finely chopped

  • 4 cloves garlic, minced

  • 1 lb ground turkey

  • 3 Tbsp truffle mayonnaise*

  • 1 Tbsp truffle hot sauce (optional)*

  • Truffle salt and cracked black pepper, to taste*

  • Hamburger buns

*Adjust truffle ingredients to taste.


Instructions

  1. In a large nonstick pan, heat about 1 Tbsp olive oil over medium-high heat. Add the onion and garlic and sauté until soft and lightly golden, 5–7 minutes. Transfer the onions and garlic to a bowl and let them cool (you can pop them in the fridge to speed this up).

  2. Once the onions and garlic are no longer too hot to handle, add the ground turkey, truffle mayonnaise, truffle hot sauce (if using), truffle salt, and cracked black pepper to the bowl. Mix gently until just combined.

  3. Form the mixture into 4 even patties, weighing them if you want them perfectly even.

  4. Wipe out the pan if needed, then add a thin layer of olive oil and heat over medium to medium-high.

  5. Add the turkey patties to the pan. Cook for about 4–6 minutes per side, or until nicely browned and cooked through (internal temperature 165°F). If they’re browning too fast, reduce the heat slightly and cover the pan for a few minutes to help them cook through.

  6. While the patties rest for a couple of minutes, toast the hamburger buns in the same pan with a thin layer of truffle mayonnaise spread on the cut sides, if desired.

  7. Build your burgers: place the turkey patties on the toasted buns and top with extra truffle hot sauce or your favorite condiments and burger toppings.
