Sweet Potato Casserole

This is a classic southern recipe that is typically enjoyed on holidays such as Thanksgiving and Christmas, but I love this dish any time of the year. This particular dish is my family recipe that we have been preparing and enjoying for decades. Whether you are looking for something to bring to a holiday party, or just really love sweet potatoes, this is the recipe for you!


Ingredients

•5 medium sweet potatoes

•1 stick salted butter

•1.5 cups granulated sugar

•1 tsp ground nutmeg

•1/2 tsp ground cinnamon

•1/2 tsp ground all spice

•1 large egg, beaten

•Mini marshmallows


Instructions

1.Preheat oven to 400°F

2. Poke 6 holes in each sweet potato with a fork

3. Tightly wrap sweet potatoes in foil

4. Place on lined baking sheet

5. Bake 45 minutes on each side

6.The sweet potatoes must be extremely soft all the way through. When you stick a fork through the baked sweet potato it should feel like you are cutting through softened butter.

7. Reduce the heat to 350°F

8. Peel the skin off the hot sweet potatoes using tongs.

9. In a large bowl add the peeled sweet potatoes. Blend until completely smooth with a hand mixer.

10. Add butter, sugar, and spices. Blend again until ingredients are incorporated.

11. Add the egg and quickly blend as to avoid scrambling.

12. Pour sweet potato mix into a casserole dish.

13. Bake at 350°F for 30 minutes

14. Add mini marshmallows, bake another 10 minutes until they're golden brown.
