Adobo Chicken Salad

I don't know about you, but I'm tired of bland chicken salad where the only hints of flavor I can detect are mayonnaise and celery. This chicken salad is a lunchtime favorite for me because it's the perfect mix of spiciness and creaminess, loaded with fun and vibrant flavors. It starts with shredded rotisserie chicken and gets its creamy texture from a combination of Greek yogurt and kewpie mayonnaise, known for its rich and custardy texture. What makes it special is the blend of Bruno's adobo seasoning, lime juice, and cilantro, which brings freshness to every bite. The spice comes from the red Fresno peppers, which also add a pop of color. Whether you serve it on a salad, in a sandwich, or enjoy it by itself, this chicken salad is sure to brighten your day.

Ingredients
•1 whole rotisserie chicken, shredded
•1 (5.3 oz) container plain Greek yogurt
•1/4 cup kewpie mayonnaise
•1/2 red onion, finely diced
•2 red Fresno peppers, finely diced (you can substitute with jalapeños)
•Juice of 1/2 lime
•1/2 cup finely chopped cilantro
•1 tsp adobo seasoning
Instructions
1. After the chicken is shredded, put it in the refrigerator until it has cooled to room temperature.
2. Combine all the ingredients in one large bowl and mix until incorporated.
*Shred the chicken while it is still warm, it will come apart much easier.
*I like to soak my diced shallots in ice water using a mesh strainer and a bowl. This will mellow out the sharpness of the onion while maintaining the flavor.
*This scoop makes the perfect 4oz portion of chicken salad
