Crispy Polenta Cakes

Polenta is a popular side dish in Italy, typically made from leftover polenta that is then fried. This is a healthier and easier alternative to fried polenta, but just as delicious! Crispy on the outside and creamy on the inside, this is a great side dish to enjoy with just about anything.

Ingredients
1 tube prepared polenta
2 Tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp dried thyme
1 cup grated Parmesan
salt and freshly cracked black pepper (to taste)
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
Pat the polenta tube dry with a paper towel.
Slice the polenta into 1/4-inch thick rounds and arrange them on the baking sheet in a single layer.
Brush or drizzle both sides of the polenta rounds with olive oil. Season with garlic powder, onion powder, paprika, dried thyme, salt, and black pepper. Sprinkle Parmesan evenly over the tops.
Bake for 30–45 minutes total, flipping halfway through, until the polenta rounds are golden brown and crisp on the edges.
