Crispy Greek Potatoes

These Crispy Greek Potatoes will fill your home with the scent of lemon and oregano. This is by far the best way to get extra crispy and golden potatoes. Crispy on the outside, creamy on the inside, and bursting with greek flavors. You have to give these a try!

Ingredients

•5 yellow potatoes, cut into wedges

•1/3 cup extra virgin olive oil

•1.5 TB dried oregano

•1 tsp garlic powder

•1/2 tsp paprika(optional)

•Salt and cracked black pepper to taste

•Juice of 1 lemon

•1 TB dijon mustard

•Feta cheese*


Instructions

1. Preheat the oven to 425°F.

2. Peel the potatoes.

3. Cut the peeled potatoes in half and then those halves into 3 making them into wedges.

4. Add the wedges to a pot of cold water and allow them to boil for 6 minutes after reaching the boiling point.

5. Drain as much water as you can and add them to a baking dish.

6. Pour in the olive oil, lemon juice, mustard, oregano, paprika, garlic powder, salt, and pepper. Mix gently.

7. Bake for 60-75 minutes, or until golden and crispy.

8. Top with as much crumbled feta as you would like and enjoy!


*Buy the feta block and cut it up yourself, I promise it tastes so much better this way!
