Chorizo Tacos

These are so easy and so good! Please stop using the taco recipe on the back of the seasoning bag. Water doesn't belong in your taco meat... Chorizo is a heavily seasoned, flavor packed, pork sausage that will make for some of the best tacos you've ever had!

Ingredients

• Olive oil

• 1 cup yellow onion, chopped

• 6 cloves of garlic, minced

• 1 jalapeño, diced (optional)

• 1/2 lime, zest

• 1lb ground chorizo

• 1 Red onion, diced*(to taste)

• Queso Fresco(to taste)

• Cilantro, chopped(to taste)


Instructions

1. Heat oil in a pan on medium hight heat. Add onions, garlic jalapeños, and lime zest and cook until soft and browned.

2. Remove onion, garlic, and jalapeño mixture and place in a bowl.

3. Add chorizo to hot pan and brown all the way through.

4. Add onion, garlic, and jalapeño mixture back to pan.

5. Add meat to tortillas and top with red onion, cilantro, and crumbled queso fresco

Topping ideas: guacamole, avocado slices, shredded cheddar, salsa, pico de Gallo, sour cream, onion


*Soak red onion slices in ice water for a less harsh and crisper onion
