Ingredients
1/2 cup salted butter, melted
2 tablespoons neutral oil (such as vegetable oil)
1 cup granulated sugar
1/4 cup brown sugar, packed
2 large eggs (or extra large eggs)
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
1 Tony’s Chocolonely Chocolate Bar, chopped
Instructions
Preheat the oven to 350°F. Lightly grease an 8×8-inch baking pan with nonstick spray.
In a medium bowl, combine the melted butter, oil, granulated sugar, and brown sugar. Mix with a hand mixer (or stand mixer) on medium speed until smooth.
Add the eggs one at a time, mixing well after each addition until fully incorporated.
Mix in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, and baking soda.
Reduce the mixer speed to low. Gradually add the dry ingredients to the wet ingredients in intervals, mixing until just combined.
Fold in the chopped chocolate bar.
Pour the batter into the prepared pan and spread evenly.
Bake for about 20-25 minutes, or until a toothpick inserted in the center comes out just barely clean. Do not overbake.
Remove from the oven and let cool completely on a wire rack before cutting and serving.
