Buttermilk Blue Cheese Dressing

I absolutely LOVE blue cheese dressing. Personally, I think lettuce is a scam, but I will eat a pile of it if it's covered in a good blue cheese dressing! You can buy blue cheese dressing in a bottle and it's just fine, but making it yourself makes the world of difference! Some of my favorite ways to enjoy blue cheese dressing are with some good chicken wings, potato chips, French fries, burgers, or a nice wedge salad with lots of bacon and croutons.

Ingredients

  • ½ cup mild blue cheese, crumbled (reserve ¼ cup)

  • ½ cup sour cream

  • ½ cup whole buttermilk

  • 1 teaspoon lemon juice

  • 2 teaspoons Worcestershire sauce

  • ½ teaspoon garlic powder

  • Freshly cracked black pepper, to taste


Instructions

  1. Crumble the blue cheese and reserve ¼ cup for later.

  2. Add the buttermilk, sour cream, lemon juice, Worcestershire sauce, garlic powder, black pepper, and the remaining ¼ cup blue cheese to a blender. Blend until smooth and creamy.

  3. Pour the blended dressing into a bowl and stir in the reserved blue cheese crumbles by hand to create a chunky texture.

  4. Refrigerate for at least 30 minutes before serving to let the flavors develop.


*You absolutely must crumble your own blue cheese for this recipe! Pre-crumbled blue cheese has preservatives in it that changes the flavor and texture.
