Banana Bread

This is the BEST banana bread on the planet. It is super moist with big chunks of sweet bananas and a light cinnamon flavor. This recipe was given to me by a family friend and I couldn't be more grateful! Better than your grandma's banana bread, and definitely a crowd pleaser!

Ingredients
•1 1/2 cups sugar
•3/4 cups vegetable oil
•4 eggs
•1 tsp vanilla
•1 package (3 oz) vanilla pudding
•1 tsp cinnamon
•2 1/2 cups flour
•1 tsp salt
•1/2 tsp baking powder
•2 tsp baking soda
•3 cups extra ripe mashed banana
Instructions
1. Preheat oven to 350°F.
2. Spray 2 loaf pans with cooking spray and coat with a light layer of sugar. This will allow the sugar to caramelize on the outside of the banana bread giving it a nice sugary crunch once baked.
3. Combine sugar, oil, eggs, and vanilla; mix well.
4. Add remaining ingredients; pudding, cinnamon, flour, salt, baking powder, baking soda, and mashed bananas. Gently incorporate as to not over mix.
5. Pour mixture into greased and sugared loaf pans. Bake for approximately 55 minutes.
