Vanilla Coconut Chia Pudding

Chia seed pudding, quite the phenomenon this stuff has become. I am not sure who came to the conclusion that seeds soaked in milk would have the potential to excite everyone from tree hugging yogis, to Instagram influencer wannabes, to constipated nine to fivers, but the man is a genius. In any case, this chia seed pudding recipe is not only great, it is also incredibly rich in antioxidants, omega 3 fatty acids, fiber, and protein. Start your morning right with a large bowl of my filling and delicious vanilla bean and coconut chia pudding.

Ingredients
•2 cups of your favorite non dairy milk*
•1/4 cup unsweetened coconut milk(canned)*
•1/2 cup chia seeds
•1 TB honey or maple syrup
•1 tsp pure vanilla extract
Instructions
1. Mix ingredients in a large bowl.
2. Scoop an equal amount into small cups or bowls.
3.Chill overnight, this will allow the seeds to soak up the moisture and create a pudding like texture. Add more milk the next day if needed depending on desired texture.
4. Customize to your liking. You can add nut butter, cocoa powder, berries, bananas, shredded coconut, etc... Personally, I like to top mine with some granola, pecan butter, and coconut cream.
*I like the So Delicious unsweetened coconut milk for this recipe
*Put the leftover coconut milk in a container with some honey or maple syrup and put it in the fridge overnight. The next day, it will have a whipped cream like texture and makes an excellent topper for fruit and chia pudding.
