Spicy Jalapeño Chicken Stir-Fry

Get ready to enjoy a simple and delicious stir-fry that brings together juicy chicken with spicy jalapeños. Cooked with onions and coated in a flavorful sauce that's both savory and slightly sweet, this dish so satisfying. With its straightforward preparation, it's a fantastic choice for a quick and tasty meal.

Ingredients:

Stir-Fry:

•1 yellow onion, chopped

•2 jalapeños, sliced

•1 TB neutral oil

•1lb boneless skinless chicken thighs, cut into bite-size pieces

•1 teaspoon white pepper or cracked black pepper

•1/3 cup cornstarch

Sauce:

•1/3 cup low sodium soy sauce

•1/3 cup rice wine vinegar

•1/3 cup water

•1/4 cup light brown sugar

•3 TB oyster sauce

•4 medium cloves garlic, minced


Instructions:

1. Heat a large pan or wok over medium heat. Add the neutral oil and sauté the chopped onions and sliced jalapeños until they become soft and fragrant. Set aside in a bowl.

2. In a mixing bowl, coat the bite-size chicken pieces with white pepper (or cracked black pepper) and cornstarch, ensuring even coverage.

3. In the same pan over medium-high heat, add the coated chicken pieces. Cook until they are golden brown and cooked through, about 5-7 minutes.

4. While the chicken cooks, prepare the sauce. In a bowl, whisk together the soy sauce, rice wine vinegar, water, light brown sugar, oyster sauce, and minced garlic.

5. Once the chicken is cooked, return the sautéed onions and jalapeños to the pan.

6. Pour the sauce over the chicken mixture in the pan. Bring the sauce to a boil, then reduce the heat to a simmer. Allow the sauce to thicken and coat the chicken, stirring occasionally, for about 3-4 minutes.

7. Once the sauce has thickened and the chicken is fully cooked, your spicy jalapeño chicken stir-fry is ready.

8. Serve the flavorful stir-fry over steamed rice or noodles, and enjoy the perfect balance of spicy, savory, and sweet flavors in every bite.
