Chicken Stir Fry

What makes this recipe special is the freshness of the herbs and ginger root. They enhance and brighten the flavor of the dish, making it far superior to a typical stir-fry. Everyone I've made this recipe absolutely loves it! In fact, the first time I made it for a large crowd, everyone had moved on to seconds by the time I took my first bite!

Ingredients
•Avocado oil
•1 large yellow onion, chopped
•2 jalapeños, diced(optional)
•3 cloves garlic, thinly sliced
•1lb ground chicken
•3 cups cole slaw mix (optional)
•3 oz container of fresh Basil leaves
•1 bunch Green onions, sliced
•1/2 cup Cilantro, chopped
Sauce
•1/2 cup chicken broth
•1 TB chili crisp(optional)*
•1 tsp cornstarch
•4 TB soy sauce
•1 TB rice vinegar
•2 tsp honey
•1 TB ginger root, juice*
•1 tsp white or black pepper
Instructions
1. Sauté onions, jalapeños, and garlic in oil until soft. Remove and set aside.
2. While the onions, jalapeños, and garlic are cooking now is the time to make your sauce. With a whisk combine the chicken broth, chili crisp, cornstarch, soy sauce, rice vinegar, honey, ginger juice, and pepper.
3. Add the ground chicken to the hot pan. Cook for about 2 minutes, then add the sauce. Bring the sauce to a boil, then reduce to a simmer and cook until the sauce is thickened and the chicken is cooked through.
4. Optionally you can add some cole slaw mix or shredded cabbage the last couple of minutes of cooking to include some vegetables in this recipe.
5. Once the chicken is ready remove the pan from the heat and add your basil, cilantro, green onion and give it a quick stir.
6. Serve with rice and enjoy!
*Mr. Bing or Fly by Jing are my favorite brands of chili crisp.
*Do not buy ground, pureed or pre-juiced ginger. It absolutely has to be fresh ginger juice, or nothing at all. Making fresh ginger root juice for this recipe is super easy. All you have to do is grate the ginger root at its finest and hand squeeze it into a spoon measure, making sure there isn't any pulp in there. Don’t worry about removing the skin.
